Apple Cocount Barfi


There is no better fruit than the crunchy apple and its nutritional values are well known. Apple is full of antioxidants which helps in prevention of diseases and that is why it is said that an apple a day keeps doctor away. 

Generally children do not like to eat fruits as such or get bored by them, they throw tantrums. IN this way you can incorporate fruits in their meal and your children will definitely love this.

Here I am giving you a recipe for making Apple Coconut Barfi. Barfi is any sweet which is made from Milk solids




Ingredients : Approx 10 pieces

For khoya sugar mixture

  1. Milk: 2 cup
  2. Sugar : 150 grams
  3. Saffron added milk: 3 - 4 spoon
For Barfi
  1. Apples : 2 medium sized,grated
  2. Coconut powder: 50 grams
  3. Ghee: 3 - 4 tsp
  4. Cinnamon powder(Dalchini): 1 tsp
  5. Cardamom (Elaichi) : 2
  6. Almonds & Cashew: 3 - 4 pieces each

Method of Preparation:

  1. Take a pan (preferably non stick) & add milk in that.
  2. Continuously stir it so that it become thick.It takes approx 20 - 25 minutes to get thick.
  3. When thick consistency is reached then add sugar and saffron dissolved milk and cook it for another 5 to 7 minutes so that sugar is melt and again thick consistency is reached.


  4.  Khoya is ready and take it out in a bowl. After taking out the Khoya keep aside and cool it for 30- 45 minutes to get good consistency. If you will add hot khoya to apple mixture it will take time to dry and you will need to continuously stir it to avoid it getting burnt.
  5. Now take another pan, add ghee and heat it on medium flame.
  6. When ghee is heated,add coconut powder and roast it just for 1 minute. Don't let it turn brown.
  7. Now add grated apple and stir it continuously on high flame. Apple would release water, let it be. Stir and make apple coconut mixture dry.
  8. Now add cardamom powder, cinnamon powder and already prepared khoya and continuously  stir it and make this mixture dry.
  9. Cut dry fruits into fine pieces and add half portion of the dry fruits mixture into apple coconut mixture. Keep the half of the mixture for garnishing.
  10. Grease on plate with ghee and pour apple coconut mixture over there.
  11. Give a uniform spread on plate with the help of butter knife.
  12. Garnish it with coconut powder and chopped dry fruits.
  13. Keep it in refrigerator for at least 2 hours. 
  14. Take it out of refrigerator and cut it in to square pieces and serve it.

Tips

  1. If u have no saffron then u can make it without saffron too by using food grade color.
  2. If you have milk powder then u can use milk powder instead of khoya. In that case u make a milk powder sugar solution by heating and put it in apple coconut mixture.
  3. U can use condensed milk too instead of milk powder. In that case no need of sugar.
  4. You can add dry fruits of your choice

Shelf life:


2 - 3 days when store in refrigerator
