Bread Pizza Disc

Bread pizza disc is snack which can be made easily in home. This is simple recipe and fulfills your pizza craving that too in home. This is bit healthy too as this is loaded with fresh vegetables. Melting cheese with Italian seasoning flavour combined with Chilli flakes gives a heavenly taste. I saw this on one of my friends blog two months back. Then I decided to cook this snacks my way.

I made it last month in dinner. That day I was on leave as my son was alone home and nobody was there to take care of him. So I had to stay back home that day. This problem you might also face on and often, isn't it. But this is also a phase of life it will also pass on. So I enjoy my motherhood and cooking simultaneously in this phase of life. Sometimes I involve my son with my kitchen work to make him engaged and make him understand the importance of household work and he also loves doing this.
So bread pizza disc I cooked in dinner as I didn't get time in day and my son kept me engaged whole day for daily routine work. Beside it, I wanted to see my one day leave as productive and wanted to make some new surprised dinner for my husband because dinner is the time when we sit together for food. So I started preparing for this food in evening. Recipe is simple and easy but chopping vegetables is little time taking. For bread pizza disc, bread is cut in round shape. But I used my cookie cutter of flower shape to make disc more beautiful and eye-catching. You can make this disc of any shape and size of your choice.

If you have no Cookie cutter then you can use two bowls of different circumferences. From this you can cut bread piece of base of disc from bigger bowl and hollow bread pieces from smaller no need to worry if you have no Cookie cutter. One interesting thing with this bread pizza disc is that residual part from hollow bread pieces can be used again spreading vegetables and mozzarella cheese and then baking.This minimises the waste part of bread. Rest waste part of bread can be used to make bread poha or bread halwa or can be used in some tikki or kabaab too.

Ingredients: making six pieces of disc

  1. Sandwich breads: 12 pieces
  2. Butter : 4 spoons
  3. Ketchup : 2 to 3 tsp
  4. Green capsicums: One small sized (fine chopped)
  5. Carrots: one small sized (grated)
  6. Sweet corn: half cup
  7. Cabbage: grated half cup ( I didn't use)
  8. Onion: one small sized ( fine chopped)
  9. Tomato: one small sized ( fine chopped )
  10. Garlic: 1 tsp, paste or grated
  11. Fresh coriander leaves: few bunches ( fine chopped)
  12. Mozzarella cheese: half cup grated
  13. Italian seasoning: 2 tsp
  14. Chilli flakes: 1 tsp
  15. Salt: As per your taste.
  16. Cookie cutter : same shape but two different size.

Method of Preparation:

1. Take twelve pieces of bread. Put big size of cookie cutter on flat bread and cut into cutter shape. Repeat same process with other bread pieces.

2.Now take out six pieces of cutter shape out of twelve and put small sized of cutter in between and cut out bread pieces.  In this step, two parts of bread would come out. One part would be hollow in between and second part the small whole piece of bread. Repeat same process with other pieces.

3.  Keep small cutter sized bread pieces apart. These pieces would also be baked with vegetables and cheese later. First we bake pizza disc.
4.  For pizza disc, we take six pieces of bread which we cut in step 1 and  six hollow bread pieces which we cut in step 2.

5.  Now take all vegetables, chopped it fine. I chopped all vegetables except carrot. I grated carrot.
Take garlic and make paste. I used grated garlic.
6.  Now take a bowl. Put butter in this. Butter should be at room temperature. If it is not at room temperature then microwave it for 30 seconds.

7.  Add ketchup, chilli flakes,salt, half tsp Italian seasoning and mix it.

8.  Now add all chopped vegetables in ketchup butter mixture and mix well.

9.   Now preheat the oven at 200 degree centigrade for 10 minutes.
10.  Meanwhile, take big cutter shape pieces of bread as in step 1. Spread vegetables butter ketchup mixture over it evenly. Now spread grated mozzarella cheese over vegetables butter ketchup mixture. Sprinkle some Italian seasoning and chilli flakes.cover it with hollow bread pieces as in step 2.

11.  Repeat same process with other pieces of bread.
12.  Now take baking sheet, line up with parchment paper. Place all stuffed pieces over sheet keeping distance between two.

13.  Now bake it at 200 degree centigrade for 15 minutes.
14.  When it is done, take it out from oven and serve it hot with ketchup.
15.  Additionally when Bread Pizza Disc is being baked in oven, take all small cutter shape pieces of bread remaining as in step2,  spread all vegetables butter ketchup mixture over it. Now spread mozzarella cheese over it, sprinkle Italian seasoning and chilli flakes.

16.  When your bread pizza disc got baked, take it out in serving plate and place ready pieces (in step 15) over baking sheet and bake it at 200 degree centigrade for 25 minutes.When it is being baked, till then you enjoy bread pizza disc with your family.


  1. Don't throw the residual part of bread. It can be used so many ways.
  2. You can choose vegetables of your choice. We don't eat or cook cabbage home. So I did not use in this.
  3. I used carrot as grated but you can chop it fine.
  4. Keep butter at room temperature.
  5. Chilli flakes can be added as per your taste.
  6. Serve it hot as mozzarella cheese would be in melting stage and gives a heavenly taste in mouth.
  7. This whole preparation can be done in advance except baking. You get ready all bread pieces, vegetables, stuffing and all. Place in airtight container on row wise. When your guests are coming or you want to eat it then take it out from freeze, bake it and serve it. But you store in airtight container and freeze for one day only. It is not good for health to eat vegetables which had been cut 1 day back. It is recommended to use immediately but if party is being thrown or guests are coming then it can be done just for one day.
