Aachari Baingan

Baingan is also called Brinjal or Eggplant. It is very versatile vegetables and can be cooked in so many dishes using this vegetable.

This recipe is very delicious and spicy too and can be served in any party , get-together or simply at home.

Ingredients : Serving for 2 persons

  1. Brinjal (Baingan): 1 medium sized (round shape) chopped
  2. Curd: 250 gram (Whisked)
  3. Cumin seeds (jeera): 2 tsp (1 tsp for roasting + 1 tsp for cracking in oil)
  4. Fennel seeds (Saunf): 1tsp
  5. Fengruek seeds (Metthi): 1 tsp
  6. Ajwain : 1 tsp
  7. Onion Seeds (Kalaunji): 1 tsp
  8. Musterd Seeds(Sarso): 1 tsp
  9. Coriander seeds (Dhaniya): 1tsp
  10. Dry red Chilli: 4 nos.
  11. Termeric powder(Haldi): 1tsp
  12. Dry Mango powder(Aamchur): 2 tsp
  13. Salt: As per taste

Method of Preparation-

  1. Take a pan and heat it. Now put cumin seeds, fennel seeds, fenugreek seeds, ajwain, onion Seeds, mustard seeds, coriander seeds and dry red chilli. Roast it for 2 to 3 minutes on high flame.
  2. Now take roasted spices in grinder jar and grind it dry in fine powder.
  3. Now take a pan, add 2 to 3 tsp oil and heat it.
  4. Add cumin seeds and let it crack, add chopped brinjal (baingan) and saute it for 2 minutes.
  5. Add Curd in brinjal and cook for 2 minutes.
  6. Add roasted spice powder, turmeric powder, dry mango powder and salt. Saute it for 2 minutes.
  7. Add half cup water and cover it to cook on low flame.
  8. When it is cooked, mash it slightly by spoon or spatula. 
  9. Take it out in serving bowl and garnish with coriander leaves. 
  10. Achari Baingan is ready for serving with hot chapati, aloo paratha or poori.
