Mint Sauce - Sweet Salty & Sour

Mint sauce I made 3 - 4 months back and couldn't post this recipe. This sauce I couldn't find in any store or market in India so I try to cook myself home and I succeeded in this work. Taste is awesome and tangy. Only simple ingredients have been used and easy to make but truly speaking little cumbersome and time taking but you can store it upto six months if you keep in fridge.

This sauce enhance the taste and even look of any ice cream and some desserts using as a ingredient or as topping. I have already posted a recipe using this sauce. Mint chocolate ice cream which I made using this recipe. I also made mint chocolate cookies and taste was sweet and little tangy and mint flavor gives freshness too

This sauce has a multiple use in food and desserts. You can use it as a flavor, as a topping, use in chaat stuff too. Color of this sauce came out so perfect green. I just loved it. Try this sauce and let me know how perfect it came out for you.
Recipe is given below.

Ingredients:

  1. Fresh mint leaves: 250 gram
  2. Sugar: 1 cup or 200 gram
  3. Lemon juice: 2 tsp
  4. Salt: 1/2 tsp
  5. Water: 1/2 cup to grind mint leaves
  6. Green food color: 1 pinch

Method of Preparation:

  1. First take fresh mint leaves and wash it with water properly and keep it aside for draining extra water.
  2. Now take mixer jar, put washed mint leaves, add 1/2 cup water and grind it into a fine paste solution. Now filter this paste solution using tea strainer.

3.    Now take a sauce pan and heat it on medium flame. Put mint paste in it.
4.    Add sugar, lemon juice, salt and green food color.
5.    Stir it continuously on high flame. After 4 to 5 minutes it will start thickening and turning into sauce texture.
6.    Take few drops  of mint mixture from pan to spoon and with the help of finger check it whether it is little sticky or not.
7.    Switch off the gas and leave it for 5 minutes to become cool.
8.    Meanwhile, you take cotton cloth and a glass jar. Set the cotton cloth on glass jar top and make a curve in between of cloth using finger so that we can easily filter and pour the sauce into jar.
9.    Pour the sauce mixture over the cotton cloth and filter it. I just forgot to take photo of this step. But process is simple and you can do it.
10.   After pouring and filtering all sauce into jar, remove the cotton cloth and keep jar open for sometime to let sauce completely cool.
11.   After cooling it, put the jar cover and use it accordingly.
12.   If you want to store it for long time, say, 4 to 5 months then store it in refrigerator keeping it in air tight jar.
Notes:

  1. Don't add too much water to grind mint leaves
  2. Use cotton cloth to strain the sauce
  3. If you store it in refrigerator for long then it might become little thick like solid as sugar gets crystallized when chilled. You can microwave it for 30 seconds to bring it back to original texture.
